Second fermentation in the bottle, as it used to be done in the old days, 'sur lie', with no added sugar or yeast. The result is a wine rich in aromas, freshness and tradition that embodies the ethos of craftsmanship.

Spoleto Trebbiano Spoletino DOC - Dry white wine Grape variety: Trebbiano SpoletinoGrowing system: guyotAltitude: 380m a.s.l.m.Bottles produced: 1.200 Harvest time: end of October until 14 November. Grapes harvested solely by hand in the early hours of the day.Vinification: cold micro-maceration of 24/36 hours on the skins. Light pressing and passage into French oak barrels where it ferments for 1 month at a constant temperature of 13-14° Refinement: batonnage in steel for 7 months on noble lees. Once cleansed it is bottled where it remains for about three months.Serving temperature: 10-12°Tasting: It releases aromas of aromatic spices, remains full-bodied and intense with pleasant freshness and persistence.

Dry Red Wine The winery's emblem, Sagrantino, Fortunato.The first official document in which Sagrantino is mentioned dates back to the 16th century and is kept in the notarial archives of the city of Assisi.At the end of the 19th century, wars and reconstructions risked the disappearance of the prestigious vine. But, thanks to the foresight of skilful vine-dressers, Sagrantino once again became the main grape variety of the Montefalco area and, gradually, of the entire Umbria region.
