Pure Chardonnay grape variety - part of which comes from a vineyard over 50 years old. Production per hectare60 quintals/ha. Harvest and Vinification Particular attention is paid to a ripening that brings good aromatic expressions. Harvesting is done by hand and in crates of approximately 10 kg. After selection in the vineyard, the whole bunches are carefully sorted and cleaned on a treadmill. This operation is immediately followed by washing the bunches and drying them by means of a gentle jet of air. After soft pressing, fermentation takes place in temperature-controlled steel tanks. At the end of this, half of the mass remains in steel tanks with its fine lees while the other part, again with its fine lees, is placed in 2nd and 3rd passage barriques for 6 - 8 months. Before being put on the market, it matures in the bottle for at least 6 months. Organoleptic notes The colour is similar to shiny gold, young and precious, furrowed by green hues that contrast its youthful nature and the composure that can be detected when the glass is moved. Suave, pungent and peppery on the nose, it draws towards the senses yellow fruit and fragrant tropical fruit. Then it is the scents of roasted peanuts and crunchy almonds that complete a complex nose with a savoury base. Spherical in the mouth, the role of wood peeps out with subtle flavours of sweet spices. The protagonist is still ripe fruit until a pleasant dynamism takes over, making the mouth feel vibrant.
