The Roccafiore winery, founded in 1999, is located in Todi, Umbria, on the Strada dei vini del Cantico in homage to St. Francis who, in these hills, had traced the lines of spirituality. At the beginning of the 1990s, Leonardo Baccarelli, an Umbrian entrepreneur with a passion for art, nature and 'beauty', chose this uncontaminated place to develop his dream: a resort, a holistic spa, a restaurant and a wine cellar where he could produce wines according to nature and with a strongly sustainable vocation. Today, after more than 20 years, the dream has not only come true, but has exceeded all expectations. Roccafiore is, in fact, a reality that has distinguished itself in the area both for the high quality of its hospitality and the wines it produces, a brand that continues to make a name for itself in Italy and around the world. Today, it is Luca Baccarelli together with his sister Ilaria who, with dedication, continue their father's dream and project, picking up and enriching the important inheritance.

100% Grechetto di Todi - clone G5, from sustainable agriculture Vinification: the grapes are gently crushed and the must obtained decanted in a natural way, spontaneous fermentation takes place at a controlled temperature in steel vats and closes in the containers in which it will undergo subsequent ageing
Maturation: 12 months in amphorae and large Slavonian oak casks in contact with the fine lees, no malolactic fermentation and, after bottling, a minimum of 6 months in bottle.

Vinification: the grapes are gently crushed and the must obtained decanted naturally, spontaneous fermentation is carried out at a controlled temperature in steel vats

Vinification: the grapes of the different varieties are harvested and processed at separate times, they are gently pressed and the must obtained is left to macerate on the skins for an average of 22/24 days, spontaneous fermentation takes place at a controlled temperature in steel vats, followed by racking and malolactic fermentation
Maturation: 24 months in large Slavonian oak casks and second-passage French barriques, after blending and bottling it rests for a minimum of 6 months in the bottle
