The Pomario Estate, owned by Counts Spalletti Trivelli, is located in the province of Perugia in the municipality of Piegaro near Monteleone di Orvieto, in the border area between Tuscany and two important Umbrian areas: the Orvieto hills and Lake Trasimeno. On this border 'crest', 500 metres above sea level, the characteristic soils of the Orvieto area combine with the particular climate of the high hills of Lake Trasimeno, where the tramontana wind dominates in winter and the lake mitigates the summer heat. Pomario consists of 2 hillocks totalling 230 hectares, very bright and isolated from the rest of the territory by a thick wood that surrounds it and slopes down towards the valley floor to the Nestore river, a tributary of the Tiber. The structure of the soil, which is rich in skeleton but with a loose silt-clay structure, the continuous light, and the presence of water sources, are the fundamental elements that have made Pomario a place of choice for the establishment of agricultural settlements since ancient times. The presence of an old farmhouse structure dating back to the early 17th century, centuries-old olive trees and an old vineyard bear witness to this. Giangiacomo and Susanna Spalletti Trivelli, having realised the potential of this uncontaminated and exceptionally rare 'agro-ecosystem', decided to purchase Pomario and manage it in harmony with the environment, following the dictates of Organic Farming and maintaining the balance. The olive grove and vineyard, although abandoned for a few years, were still in excellent condition and in perfect balance with the environment. They were thus recovered and restored together with the ruins of the old farmhouse. Over the years, new vineyards and olive groves have been planted.

Sariano is a very elegant red Riserva that perfectly expresses its terroir located between the hills of Lake Trasimeno and the hills of Orvieto. The position, the soil and the particular lighting make Pomario the ideal place for growing vines, which in fact have been healthy and productive for more than 40 years in the old Sangiovese vineyard, recently renovated. The grapes are carefully selected in the vineyard through low-yield pruning and selective thinning. In late autumn, the harvested grapes are immediately destemmed and spontaneously undergo fermentation, at a controlled temperature, with indigenous yeasts in approximately 25 hl steel tanks. At this stage, the only interventions are a few pumpovers in the air if necessary. At the end of the fermentation and prolonged maceration, where the wine is passed into 25 hl oak barrels and undergoes malolactic fermentation. Sariano remains in the wood together with the lees until March of the following year. After the first racking, the wine returns to the wood in which it remains until bottling, which takes place after a light filtration.

Rubicola is mainly made from Sangiovese grapes with the addition of Merlot and other grapes typical of central Italy. This fresh and acidulous red wine is the result of an early harvest and natural vinification. After harvesting, the must is left to ferment naturally in contact with the skins for a long period, refreshed only occasionally by a few delestages. Once drawn off, it matures in steel tanks. The cold winter weather facilitates clarification without the use of animal products and bottling takes place in early spring. It is a fresh and acidulous red wine with hints of bergamot and dog rose, slightly tannic and well-balanced. Suitable for aperitifs and light meals, it can also be paired with freshwater fish and seafood soups.

Arale is a white wine from a vineyard consisting of old Trebbiano and Malvasia varieties recovered from the old vineyard in which the original vines and their recent clones live together. The white Trebbiano and Malvasia grapes, from which Arale is made, undergo careful selection in the vineyard and reach average yields of no more than 40 q/ha. Harvesting takes place early in the morning in October. The must is left to macerate with the skins until the cap rises, after which it is pressed and fermented in barriques with the inoculation of indigenous yeasts. The only interventions carried out are daily batonage, the first coarse destemming occurs only at the end of the alcoholic and malolactic fermentations. We then proceed with a further four annual cleanings in order to obtain a clean wine ready for bottling after a very light filtration.

The Grechetto and other white grapes that give rise to Batticoda come from a steep, stony and sunny vineyard. Thanks to the peculiarities of the terrain, the grapes already show the characteristic aromas of this wine at the end of August. After manual harvesting, the grapes are destemmed and immediately pressed. This is followed by racking in steel where fermentation takes place freely. With the winter temperatures, the wine matures and clarifies without the aid of animal products. Batticoda is bottled at the end of winter after a light filtration. Acidulous and slightly sapid, it leaves a persistent slipperiness in the mouth. A dry wine excellent as an aperitif, suitable for first courses and vegetarian or fish main courses.

Rondirose wine is a very fragrant and fresh young wine that comes from the Merlot, Sangiovese and Ciliegiolo grapes planted in the sunniest and most ventilated area of the estate. The grapes are harvested when the acidity is still high and the skin has just begun to yield colour. Harvested early in the morning, they are partly placed in the press and left to macerate for a few hours at a controlled temperature and partly salted. The colour of the must is selected through gentle pressing so as to retain the aromas and colour of the freshly harvested grapes. Fermentation using indigenous yeasts proceeds in steel. The finished wine is bottled after some racking and a light filtration so as to maintain the fresh aromas and colour of the freshly harvested grapes.

Strongly desired by Countess Susanna, encouraged by the company's female staff (the Pomario Witches), Muffato delle Streghe, a special name for a special wine, is a harmonious and well-structured alcoholic nectar with aromas of honey, spices, candied fruit and caramel, due to the presence of the noble rot, Botrytis cinerea. It is a dessert wine that, due to its important structure, can also accompany foie gras and mature or spicy cheeses. The Witches' vineyard, planted in 2010, with its terraces sloping down towards the forest, lends itself particularly well to the production of this wine, thanks to the Reisling and Sauvignon Blanc vines. In autumn, the fog remains in the terraces until late morning, creating a 'bewitched' atmosphere, and then slowly thins out towards the forest, making way for sunny, breezy afternoons. Harvesting takes several weeks because only grapes whose berries have reached the right mould cover are selected. The wine rests in wood for 2-3 years before finally being bottled only in the 0.5-litre format.

The natural terraces that slope down from the top of the hill towards the forest are the ideal habitat for our olive trees, which are numerous and perfectly intact despite their age.It was therefore sufficient to add new trees to obtain a productive and healthy olive grove. The main varieties are the classic ones found in Umbria, with a predominance of Frantoio and Moraiolo (70%), Leccino (25%) and various pollinators.Cultivation techniques are traditional in accordance with the dictates of organic farming. Harvesting is manual and takes place very early. The olives are cold pressed within the first 3 hours of harvesting. It leaves a spicy aftertaste and a fresh olive flavour.
