The ancient art of extra virgin olive oil production has been handed down in the Trampolini family from generation to generation since 1785. The oil mill, however, has an even more ancient history; it was in fact an integral part of a commandery of the ancient chivalric order of the Templars, the famous warrior monks. Proof of this is the majestic Templar Abbey of San Bevignate that stands a few steps away from the oil mill, one of only two still existing in Europe and the only one in Italy. It is therefore since 1300 that within our walls, following an unchanged tradition, the production of high quality Extra Virgin Olive Oil has been perpetuated.

An excellent oil obtained by processing olives from the 15th century olive grove adjacent to the Frantoio, no later than 5 October. Obtained from Dolce Agogia Moraiolo and Frantoio cultivars, it has an emerald green colour and a distinct fruitiness; very rich in polyphenols and antioxidants. The label is embellished with the artwork "Un tuffo nell'Olio" by MaestRo Natino Chirico.

Olio Extravergine di Oliva

This is our product of excellence, an Extra Virgin Olive Oil that encapsulates the scent and flavour of the hills surrounding our Perugia. Generous in its unmistakable scent of freshly pressed olives and its medium intense fruity flavour. Obtained from Frantoio, Leccino, Moraiolo and Dolce Agogia olive varieties, hand-picked at early ripening between late October and early November.
The habitat is limestone soil with a stony surface and clayey depth between 300/600 m altitude. Extraction takes place within 12 hours of harvesting, cold, with our latest-generation Alfalaval X4 continuous cycle machines. All this gives the product unique characteristics, low acidity, reduced peroxide number and a very high polyphenol content; naturally cloudy appearance, with a medium bitter-spicy sensation. Excellent in combination with grilled meats, grilled vegetables, bruschetta, legume soups and wherever a strong taste is required.

Extra Virgin Olive Oil

Our Organic Extra Virgin Olive Oil is obtained from cultivations in which the rules of the Organic Cultivation Regulations are strictly applied. The fruits are harvested in November, at the right point of ripeness. The oil obtained has a medium fruitiness with good bitter and spicy sensations, scents of fresh olives and a leafy green colour with golden hues. The habitat is calcareous soil with a stony surface and clayey depth between 100/600 m altitude. Extraction takes place within 12 hours of harvesting, cold, with our state-of-the-art Alfalaval X4 continuous cycle machines. The characteristics of this oil are low acidity, low peroxide number and high polyphenol content. The cultivation of the olive groves, harvesting, processing and bottling are subject to the strictest biological controls. We recommend its use in every classic preparation of the Mediterranean diet.

An olive juice with the intense, fresh scent of freshly picked olives. Available exclusively during the olive harvest period, i.e. from mid-October to December, our Freshly Squeezed Extra Virgin Olive Juice is an Olive Juice with a very high polyphenol content that enhances the bitter and spicy characteristics, releasing intense aromas of freshly harvested Olives. It is a unique product in its characteristics, dense and full-bodied with an intense green colour. The slight sedimentation that inevitably forms at the bottom of the bottle is synonymous with the genuineness of the product. Extraction takes place within 12 hours of harvesting, cold, with our state-of-the-art Alfalaval X4 continuous cycle machines. To fully enjoy its characteristics, we recommend using it strictly raw, on bruschetta, boiled potatoes and soups in general.
