In the kitchen, marshal Pietro kneads, inspired by his grandmother's recipe, tagliatelle and tagliolini, which he dresses with truffles or porcini mushrooms from the surrounding hills, with tomato sauce or with giblets; pappardelle with wild boar sauce and chickling or spelt soups are also excellent. The meats, cooked by Pietro according to the tradition of these places, are veal tripe with Parmesan cheese, lamb offal, chicken or rabbit all'arrabbiata, pajata, truffle fillet, the fragrant underground mushroom that also gives flavour to delicious fritters. In conclusion, be sure to try the torcolo with Vino Santo or the tozzetti. The wine list, illustrated by Elio, an expert sommelier, allows for interesting pairings with all dishes and also with cheeses (fossa pecorino). Finally, we would like to remind you that Panaro's text cakes are also vacuum-packed and can be shipped throughout Italy.
