"The Castelluccio plain, surrounded like a crown by the Sibillini Mountains, resembles a garden". In this imposing natural setting, steeped in magical and legendary atmospheres, Peppe and his family share with their guests the relaxing climate and ancient flavours that are part of the tradition of Castelluccio di Norcia.
Consistently, we try to integrate ingredients from the area, or from the region, when absent. Appetisers include the inevitable local cured meats, and the extraordinary coratina di agnello al vino bianco (lamb coratina in white wine) and farecchiata (traditional wild pea polenta seasoned with oil and anchovies). After an excellent choice of soups (lentils, spelt, rustic various legumes), the first courses include the ever-present tortelloni with fresh ricotta and wild herbs, canaloni del vettore, strengozzi alla norcina, potato and wild spinach gnocchi with mutton ragout, and tagliolini with Norcia black truffle.Among the grilled meats of organic quality and true flavour, the castrato, lamb scottadito, tagliate or beef fillet with black truffle should be emphasised, and the fresh ricotta and black truffle omelette should not be missed. And then, depending on the season, wild spinach (violatri), turini mushrooms, wild elderberry or broncole (indigenous plums) jams to accompany a selected choice of top-quality local cheeses. Ricotta cheese cake and homemade tozzetti with vin santo or sagrantino passito are some of our proposals to end the meal.The wine cellar offers around sixty labels with a good selection of wines from central Italy, and a special focus on the few but fantastic Umbrian wines.
