The restaurant opened its doors in 1850, under the name of the same inn, now a hotel, Grotta Azzurra. Many wonder where the origins of the latter name come from. Simply from the desire to attract merchants from southern Italy who often travelled north and chose to stop in Norcia for its delicacies before tackling the central Apennines. While the name Granaro del Monte refers to the premises where the restaurant is located that housed the second Frumentari mountain in Italy, the first was in Florence. The Frumentary Mountains were created to lend the poorest farmers wheat and barley for sowing. They were particularly aimed at the many who lived in conditions of pure subsistence. Their function was to provide support for the agricultural cycle. In order for them to function, farmers participated with days of free labour during sowing and harvesting, and the outcome was stored as seed to be distributed to farmers who lacked it.
