The olive grove, with its 620 trees, covers about 2.5 hectares on the farm and is home to three varieties: Leccino, Frantoio and Moraiolo.

The olive harvest begins in mid-October. The olives are harvested by hand and with the help of mechanical arms, which do not damage either the tree or the fruit. Within 24-48 hours after harvesting, the olives are defoliated, washed and crushed so as to preserve all their organoleptic properties.
