FROM HARVEST TO MILL

The Azienda Agricola Passo della Palomba is also dedicated to the cultivation of olive trees, which have been present on the property for many years. The Gilotti family cannot be defined as a farming family, although Alessandro's grandfather was a farmer on a large estate in the Viterbo area. However, they have a great passion for everything related to agriculture, and for many years now, with competence and seriousness, they have personally supervised all the production phases, from cultivation to pruning, from harvesting to milling and packaging of the extra virgin oils produced with a lot of work and passion to preserve intact the perfumes and aromas and above all the nutraceutical properties of this incredible product.

In a fun and enjoyable way we will learn many things and awaken our organoleptic abilities by tasting oils and food. The programme includes:

1) The history of the olive and oil starting with the ancient Phoenicians, Romans to the present day. How ancient peoples also had knowledge to distinguish the quality of the product.

2) Olive oil production in the world and the notion to understand the varieties cultivated (Cultivars)

3) Classification of olive oils according to international rules

4) How to read labels and avoid misleading advertising to understand how to select the best quality.

5) How to use OEVO in cooking and eliminate potential associated risks (Smoke Point)

6) Specific OEVO tasting session during which participants are introduced to tasting techniques aimed at appreciating the qualities of a good Extra Virgin Olive Oil and how to pair it with dishes whether gourmet or everyday. We will taste one of the Slow Food Oil Presidia (Moraiolo Passo della Palomba). We will offer simple dishes to pair with the proposed oils and we will also drink a glass of one of our excellent wines.

7) Visit to one of our neighbouring olive groves with explanations of the various cultivars and cultivation techniques

8) Visit to our modern two-stage oil mill to understand the various processing steps to produce a high quality OEVO compared to old and obsolete extraction techniques. Other things to keep in mind This is a recommendable experience for those who like to know what is behind OEVO. It is suitable for adults but also for children.
